About last night…
The other day I saw this tiktok about Pasta dish inspired by French Onion Soup and I thought: “Let’s do it”. So I actually bought the ingredients but they sat on the kitchen table for like a week and a half before I finally made it. I browned and then caramelized the onions and in a separate pan I cooked most of the moisture out of some mushrooms so they get that chewy meaty sort of texture. Added some shallots and garlic to both pans, cooking until shallots were soft and garlic was fragrant and then combined them. Cooked everything in some homemade vegetable broth and when the water reduced added some heavy cream.
While that was cooking up I roasted some garlic and mashed it into some softened butter before spreading that over some cuban bread that I cut in half. I alternated cheeses between mozzarella, provolone, and swiss before topping it off with shredded parmesan. I broiled it after the cheese melted and I burned it more than I meant to but it was still so good.

About the other night…
This came from an instagram video I added to my favorites in a folder dedicated to cooking. I’m mostly meatless so I have way more dinner ideas without meat but it’s still hard to figure out WHAT to eat. Luckily I had just bought some enoki mushrooms from my last trip to the asian supermarket (I say lucky went specifically for the mushrooms and some white miso) and all I had to do was slice horizontally to create thin layers.
The trick to everything is the broth which is part flour, part cornstarch, and part ice water. Like with the ice cubes in the bowl (I mixed the cold water until it got the right consistency and then stirred the ice cubes in). Dip the mushrooms in there and shake of a little batter and fry, giving them all a small shake so they spread out like a fan. It was so crispy my mom asked me to eat another one so she could hear the crunch. 10/10 would eat again.
